My First Breakfast Cobbler - Quick & Easy Berry Delicousness

This might just be the most delicous warm berry breakfast I've ever had! I'd been hearing how tasty Dr. Fuhrman's Blueberry Breakfast Cobbler recipe was and wanted to try it but didn't have the ingredients on hand so I made up my own (much simpler) version with what I did have. I'm glad I improvised because it was yummy and really fast and easy to make.

Here's how I made it:
  • 1 sliced banana
  • 1 cup frozen mixed organic berries
  • 1 tbsp raisins
  • 1/2 tsp vanilla
Mix above in a microwave safe bowl and microwave for 1 minute.
Stir, microwave one more minute, then add:
  • 1/2 tsp cinnamon
Stir and cook for another 1.5 minutes.
Stir again and enjoy!

Notes: As far as I know, this recipe is vegan, gluten free and very healthy. There's also no added sugar (the fruit is definitely sweet enough). The measurements are approximate as I just did things by eye and not with measuring implements. I'm not an affiliate of Dr. Fuhrman and wasn't asked or paid to write this post. I am just a big fan of his nutritarian diet style.

Vegan Melted Savoy Cabbage With Herbs

I saw the Melted Savoy Cabbage with Herbs recipe on page 158 of the May 2012 issue of Good Housekeeping and wanted to make a vegan and dairy free version. I haven't made it yet but want to pass the magazine on to a friend so am posting my proposed recipe here for future use. I'll post a comment when I make it but if you beat me to it please let me know what you think and if you modify it please share what you did. Thank you and enjoy!

Vegan & Dairy Free Melted Savoy Cabbage With Herbs Recipe

Ingredients:
3 tbsp vegetable oil
1 small onion, thinly sliced
1 head savoy cabbage, cored and thinly sliced
1/2 cup water
1/4 tsp salt
3 green onions, thinly sliced
1 tbsp fresh tarragon leaves, finely chopped
1/8 tsp pepper

Directions:
  1. Heat oil on medium in a 5 quart sauce pot, add the small onion, cooking and stirring for 3 minutes.
  2. Stir in the cabbage, water and salt and then reduce heat to medium-low.
  3. Cover and cook 15-20 minutes or until cabbage is very tender, stirring occasionally. Remove from heat.
  4. Stir in the green onions, herbs and pepper.

Lime Green Tropical Health Smoothie (Vegan)


We had some extra fresh squeezed orange juice so I thought I'd try a tropically inspired smoothie this morning. Please note that I tend to just throw stuff in the blender so my quantities are estimates. Also I like my smoothies more liquid than thick so if you like yours thick use less water and/or juice. Here's the recipe. 

  • 2 cups fresh baby kale (or greens of your choice)
  • 1 cup orange juice
  • 1 small banana 
  • 1 cup frozen pineapple (or use fresh and add a few ice cubes)
  • 1 scoop vegan vanilla pea-rice protein powder (or supplement of your choice)
  • 1/2 cup water
Put first five ingredients in blender. Pour 1/2 cup water over powder in blender. Blend until completely smooth. Enjoy immediately (add ice if you like).
